The perfect salad to brigten up a Winter meal!
mini salad greens
1 red onion, sliced
2 tablespoons toasted pumpkin seeds
1 cup green olives
salt and pepper
- Peel and section the wedges of the orange, being sure to cut away all the membranes.
- Place greens, orange slices, red onion, pumpkin seeds and olives on plates.
- Sprinkle with salt and pepper and drizzle with a little olive oil.
I love to pair this salad with roasted chicken.
