Yep, just two ingredients: banana and eggs. Just make sure your bananas are really ripe. These pancakes are light and delicious. And you don’t need sugar in the batter—the bananas are sweet enough.

You will need:
3 ripe bananas
2 large eggs
butter or cooking sprayfor frying
honey or maple syrup for serving (optional)
blueberries for serving (optional)

- Mash the bananas really well in a bowl.
- Beat the eggs and add to the bananas. Mix well.
- Heat butter in a pan over medium-high heat, and add 2 tablespoons of the mixture per pancake. Cook about 3–4 minutes on each side.
- Plate and top with blueberries and honey or maple syrup if you like.
