You don't have to turn on the stove or oven to make this healthy and fresh salad!

Serves 4

1/2 cucumber, you can peel it if you want, in thin slices

1 white peach, thinly sliced

1/8 water lemon, cut into thin strips

fresh basil leafs

1/4 cup toasted pine nuts

5 tablespoons olive oil

2 tablespoons sherry vinegar

salt and pepper


  1. In a large bowl mix gently together cucumber, peach, watermelon, basil, and pine nuts.
  2. Divide onto 4 plates.
  3. In a small bowl mix oil and vinegar, drizzle over the salads.
  4. Sprinkle with salt and pepper and serve.

TIP:

You can add some shredded chicken or other protien to this as well.
