Today is a hot day in New York. 98F, thats 36C, thats hot folks. The only thing I want to eat when it's this hot is fruits and berries. And drink lots of water of course. This is a very simple but tasty fruit salad with ginger syrup. It really cools you down a bit. Stay cool!

Serves 4

1/2 cup sugar
1 cup water
1 2inch peeled piece of fresh ginger
1/4 watermelon, in cubes
3 cups strawberries, hulled and halved
fresh mint

  1. Start with the syrup.
  2. Bring sugar, water and ginger to a boil in a small saucepan.
  3. Let it simmer for 5 minutes, cool.
  4. Discard the ginger.
  5. Place watermelon, strawberries and fresh mint in a large bowl and ad the syrup, mix well, cool and serve.
