Serves 6

You will need:

6 medium oysters, shucked
large handful of soft lettuce (or sea lettuce if you can find it)
a few endive leaves
green beans, blanched, salted
flat leaf parsley
squeeze of fresh lemon
  1. Top the freshly shucked oysters with pieces of lettuce, endive, beans, and parsley.
  2. Add a squeeze of lemon.
  3. Serve immediately, balanced on chilled beach stones.
