You can make this dish with either langoustines or large shrimp.

Serves 4

8 langoustines or 1 pound of large shrimp

juice of 1 lemon

grated zest of 1 lemon

salt & pepper, to taste

3 thick sliced of brioche, cut into 1-inch cubes

3 tablespoons butter

1 tablespoon chopped thyme

  1. Preaheat oven to 375F.
  2. Cut the langoustines or shrimp in half lengthwise and place them meat side up in a large baking dish.
  3. Top with lemon juice, zest, salt, and pepper.
  4. In a bowl mix brioche, butter, and thyme.
  5. Place mixture on top of dish and bake until golden, about 12–15 minutes.
