This is a great little recipe I whipped up a while back. It's the perfect little dessert or snack on a hot summers day.

Serves 4

1/2 cantaloupe melon, pealed and cubed
1 teaspoon sugar
1 tablespoon lemon juice
2 cups plain yoghurt
1 tablespoon honey
1/2 vanilla bean, seeds scraped out

  1. Place melon, sugar and yoghurt in a blender and whizz until smooth.
  2. Pour into 4 glasses.
  3. Mix together yoghurt, honey and vanilla and top of the glasses with the mixture.
  4. Cool for 20 minutes and serve.
