The lemon and dill make this fresh salad bright and delish!
6 tablespoons olive oil, divided
1/2 yellow onion, finely chopped
1 can cannellini beans, rinsed
2 grilled chicken breasts, shredded
2 Lebanese cucumbers, sliced
2 tablespoon dill, finely chopped
1 tablespoon lemon zest
2 tablespoons lemon juice
salt and pepper
- Heat 2 tablespoons of olive oil in a pan, and sauté the onions until soft. Add the beans and warm them through.
- Transfer onions and beans to a salad bowl. Add chicken, cucumber, dill, and lemon zest.
- To make the dressing, whisk lemon juice, 4 tablespoons of olive oil, salt, and pepper in a small bowl.
- Pour dressing over the salad. Toss and serve.
