Some years ago my sister asked me to make a cake for my niece's 6th birthday. I wasn't really in the mood to bake a cake, so what I did instead was to make cupcakes in coffee cups. They turned out really cute, with pastel colored frosting and coconut shavings on top. Just make sure your cups are oven safe. I got the ones in the picture from Crate & Barrel.

Makes 8 large cups

1 1/2 stick unsalted butter, softened+1 tablespoon for greasing the cups
1 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cup plain flour
1/2 teaspoon baking powder
1/2 cup milk
coconut shavings

  1. Preheat oven to 350F.
  2. Grease 8 large coffee cups.
  3. Beat butter and sugar with an electric mixer on medium speed until pale and fluffy.
  4. Add eggs, one at a time.
  5. Mix in vanilla, flour, baking powder and milk.
  6. Mix until smooth.
  7. Spoon batters into cups, filling about two-thirds full.
  8. Bake until a cake tester comes out clean, about 12 minutes.
  9. Cool, frost and sprinkle with coconut shavings.
