A wonderful and quick weeknight meal that's warm, filling, and chock full of flavor!
You will need:
4 spicy italian sausages, just the meat
1 large yellow onion, shopped
2 cloves of garlic, sliced
1 head of escarole, rinsed well
1 can of white beans, rinsed
salt and pepper
- Start by frying the sausage in a large pot. You don't need any oil as the sausage will fry in its own fat.
- Add onion and garlic and sauté until soft.
- Add the stock, escarole, and beans and let it simmer to the escarole wilts, takes about 4-5 minutes.
- Season with salt and pepper and serve.
