Pineapple and rum is a match made in heaven. This is a great and easy dessert—a bit boozy, but hey!
SERVES 6
1 fresh pineapple
2 tablespoons butter
1½ cups rum
2 tablespoons sugar
½ vanilla bean, seeds scraped out

- Peel the pineapple and cut it into thick slices. Leave the core in.
- Melt the butter in a large pan and cook the pineapple until golden on each side.
- In a small saucepan, mix rum, sugar, and vanilla. Bring to a boil and simmer for 4 minutes.
- Plate the pineapple and serve with the warm rum syrup on top.
