I had the best day ever yesterday. Had a long walk in Central Park here in New York with my friend Kurt. It was amazing, sun, flowers, people, ice cream and lots of music. Before our walk we had breakfast at a swedish cafe where we had baked eggs. This is not the same, more my take on a typical american breakfast dish, homefries and eggs. So I leave you with the recipe and hope spring will come very soon wherever you are.

Serves 4

2 tablespoons butter
4 shallots, thinly sliced
6 large potatoes, peeled and coarsely chopped
12 sage leaves
4 eggs
Salt and pepper, to taste

  1. Preheat oven to 250ºF.
  2. Melt butter in a large skillet; sauté shallots until soft.
  3. Add potatoes and cook until soft.
  4. Stir in sage leaves.
  5. Crack 4 eggs on top.
  6. Sprinkle with salt and pepper.
  7. Bake until eggs are set, about 4 minutes.


Serve hot with toast.
