The sweet/sour lemon paired with the salty parmesan is such a divine thing. Zucchini and olives bring it to the next level! You could use yellow squash for this recipe as well.
Juice from 1 lemon
1/3 cup olive oil
1/3 cup grated parmesan+more for serving
salt and pepper
1 zucchini cut into very thin strips
1 cup fresh baby spinach leafs
1/2 cup green olives
1 lb cooked pasta
- In a bowl mix lemon juice, oil and parmesan.Season with salt and pepper.
- In a large bowl mix squash, spinach, olives and pasta.
- Toss with the sauce and serve with extra parmesan and some pepper on top.
