Serves 12

1 cup sugar
1/3 cup corn syrup
2 1/2 cups water
1 cup lemon juice, about 8 lemons

  1. Place sugar, corn syrup and water in a saucepan.
  2. Cook the mixture until the sugar is disolved.
  3. Remove from heat and add the lemon juice.
  4. Cool.
  5. Pour the mixture into an ice cream make and freeze.
  6. If you don't have an ice cream maker, you can pour it into a bowl and place in the freezer.
  7. Take it our every hour and stir and scrape it with a fork.
  8. Do that until you have a nice texture.
  9. It's now called a granita and not a sorbet.
