Serves 4

1 pack of rice noodles, soaked like it says on the package

2 cups baby spinach

1 cup sprouts

1 red chili, thinly sliced

4 eggs, hardboiled, peeled and cut in half

6 cups boiling chicken stock

chili sauce (sriracha)

fresh mint

  1. n 4 bowls add cooked noodles, spinach, sprouts, chili and egg.
  2. Pour over the boiling broth.
  3. Add chili sauce, as much as you want.
  4. Serve with some fresh mint.


You can make this soup more hearty by simply adding a protien like chicken, shrimp or beef.
