A classic recipe that you'll make again and again!

Makes 8 large cookies
2 sticks butter, soft
¾ cup light brown sugar
¾ cup sugar
2 large eggs
1 teaspoon vanilla
2 cups rolled oats
1½ cups all purpose flour
1 teaspoon baking powder
1 cup shredded coconut
2 cups raisins
- Preheat oven to 380°F.
- In a large bowl, beat butter and sugars until light and creamy.
- Add the eggs and vanilla and beat it well into the mixture.
- Add oats, flour, baking powder, coconut, and raisins and mix until combined.
- Place 2 tablespoons of dough on a baking sheet covered with parchment paper. Give them plenty of room, as they grow while baking.
- Bake until golden, about 12–14 minutes.
- Cool on a wire rack.
