Sometimes a dish gets born just out of what you have left in your fridge. A while ago I had some friends over for dinner. One of them forgot to tell me that she didn't eat meat. And I had made like a meat bonanza. I mean it was meat on meat. So i looked in my fridge and came up with a pear and goat cheese salad with mustard vinaigrette. It turned out really nice, she was happy. And I have made it two times after that. It's really good.

Serves 4

2 pears, sliced
1 cup crumbled goat cheese
6 tablespoons olive oil
1 teaspoon honey
1 tablespoon mustard

  1. Place the greens on plates and add pear slices and goat cheese.
  2. Sprinkle with salt and pepper.
  3. Whisk together oil, honey and mustard and pour over the salad and serve.
