SERVES 4 TO 6 PEOPLE
You will need:
1 large onion, finely chopped
4 garlic cloves, minced
4 tablespoons butter, melted
1⁄2 lemon, juice and zest
1 teaspoon kosher salt
1 teaspoon cracked black pepper
4 lamb steaks

- Whisk together onion, garlic, butter, lemon juice, zest, salt, and pepper into a small mixing bowl.
- Coat steaks with marinade in a large zip-top plastic bag or reusable container with lid. Marinate overnight in the refrigerator.
- Preheat a gas grill or a conventional oven to 350°F. Cook steaks on the top rack of a grill or a grill pan in the oven until the internal temperature reaches 145°F. Turn a couple of times to ensure even cooking.
- Rest for 10 minutes before serving with grilled vegetables on the side.
