Use small potatoes for this dish. The pesto will have a delicate garlic taste.
You will need:
1 lb small potatoes, washed well
1 tablespoon toasted pine nuts
1⁄2 cup grated Parmesan
1 cup olive oil
salt and pepper, to taste
- Boil the potatoes soft in salted water, drain and place in a large bowl.
- Place ramps, pine nuts, Parmesan, and oil in a food processor and blend until you have a chunky sauce. Season with salt and pepper.
- Mix potatoes and sauce and serve.
