This is one of my favorite salads to serve with barbecue chicken. Everything bagel spice can be found at most stores, and Trader Joe’s makes a very good one.
It’s summer, it’s warm, and, I don’t know about you, but some days I just can’t deal with turning on the stove. That’s where these raw, vegetable-forward recipes come in—no cooking required. So we and our kitchens can stay nice and cool.

4 medium summer squash, thinly sliced
1/4 cup slivered almonds, toasted
1/2 cup soft chèvre/goat cheese
3 tablespoons lemon juice
3 tablespoons olive oil
1 teaspoon everything bagel spice
- In a large salad bowl, add squash, almonds, and chèvre. Toss gently.
- To the same bowl, add lemon juice, olive oil, and everything bagel spice. Toss just a little to coat, so you don’t break up the cheese too much.
- Serve immediately.
