A salad that's full of flavor, this salad can be eaten by itself or served as a side dish with chicken or turkey.
2 tablespoons butter
2 large firm apples, peeled, cored, and cut into chunks
2 celery stalks, sliced
1/4 cup celery greens, chopped
salt and pepper
1/2 cup blue cheese, crumbled
1/4 cup pecans, salted and toasted
2 tablespoons sherry vinegar
2 tablespoons olive oil
- Heat the butter in a pan.
- Sauté apples and celery until the apples start to soften a bit, but don’t cook them all the way through. Season with salt and pepper.
- Place in a medium bowl. Toss with celery greens, blue cheese, and pecans.
- In a small bowl, whisk together sherry vinegar and oil, and pour the vinaigrette over the salad.
- Mix and serve.
