One of my favorite things is roasted corn with ranch dressing. But the dressing has to be my own homemade one. If you’re making this to share, make a lot, because I guarantee, it will be very popular.
SERVES 4
You will need:
2 ears fresh corn on the cob
2 tablespoon olive oil
pinch of salt
pinch of pepper
pinch of garlic powder
pinch of onion powder
8 corn tortillas, heated
1 cup arugula
1 avocado, sliced
1/4 small red onion, thinly sliced
homemade ranch dressing
pinch of red chili flakes, optional
for the dressing:
1⁄3 cup sour cream
1⁄3 cup mayonnaise
1/4 cup water
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon dried chives
1/2 teaspoon dried dill
salt and pepper to taste

- Use a knife to cut all the kernels off the corn cobs.
- Heat the oil in a sauté pan. Add corn, salt, pepper, garlic powder, and onion powder.
- Cook until the corn starts to get golden.
- Fill your tacos with arugula, avocado, red onion, and ranch. Add some red chili flakes if you want more heat.
- To make the dressing, Place all the ingredients in a bowl and mix well. If the dressing seems too thick, just add a little more water. The dressing tastes best after it has rested 2 hours in the fridge.
