I hope you all had a great holiday and an even better new year. Hope it will be a great year for all of us. Here in Brooklyn we had some crazy days of snow. It was like my childhoods Norway. When it's like that all I want to do is spend time in the kitchen and cook. Makes me feel safe and good. One day I made this sage and garlic roasted pork loin. It turned out so good. I served it with some mashed potatoes that I mixed in some of the roasted garlic. What a hit. Soft, creamy with a gentle garlic kick. Ahhh, life is good.

Serves 6

2 1/2 pounds pork loin
2 tablespoonsOlive oil
Salt and pepper, to taste
2 tablespoons butter
1 whole garlic bulb, top cut off
1 bunch whole sage
1 cup chicken stock
1 cup white wine

  1. Rub the pork loin with olive oil; season with salt and pepper.
  2. Coat a pan with oil and heat; brown the pork on all sides.
  3. Place in an ovenproof dish with the garlic.
  4. Sprinkle sage on top and secure meat with kitchen string.
  5. Add the stock and wine.
  6. Cover with foil and cook for 1 1/2 hours.
  7. Remove the foil and cook for another 30 minutes.
  8. Remove from oven and let the meat rest 10 minutes before slicing.
  9. Serve with mashed potatoes, garlic and the jus from the pan.
