This is a great weekend supper chicken recipe!

Serves 4

1⁄2 cup soy sauce

1⁄4 cup water

1⁄4 cup brown sugar

2 cloves garlic, finely chopped

1 inch ginger, finely chopped

1 cinnamon stick

2 star anise

1⁄2 cup orange juice

1 large organic chicken

olive oil

4 garlic bulbs, cut in half lengthwise

  1. Preheat oven to 375F.
  2. In a small pot bring soy sauce, water, sugar, garlic, ginger, spices, and orange juice to a boil.
  3. Simmer for 15 minutes or until the glaze thickens.
  4. Rub the chicken with olive oil and place in an ovenproof dish.
  5. Add the garlic.
  6. Pour 1⁄3 of the glaze over the chicken.
  7. Bake the chicken for about 1 hour to 1 hour 15 minutes. Make sure it's done with a thermometer.
  8. Every 20 minutes, take it out and glaze.
  9. Let the chicken sit for 10 minutes before serving.
