The perfect salad to brigten up a Winter meal!

Serves 4

2 oranges

mini salad greens

1 red onion, sliced

2 tablespoons toasted pumpkin seeds

1 cup green olives

salt and pepper

olive oil

  1. Peel and section the wedges of the orange, being sure to cut away all the membranes.
  2. Place greens, orange slices, red onion, pumpkin seeds and olives on plates.
  3. Sprinkle with salt and pepper and drizzle with a little olive oil.
  4. Serve!


I love to pair this salad with roasted chicken.
