It's taco time! I like feta on my tacos, I know it's not authentic Mexican, but it's authentically ME!
Serves 4
1 green chili
1 tablespoon olive oil
3 heirloom tomatoes, diced
2 tablespoons olive oil
1 tablespoon rice vinegar
salt
8 tacos, grilled in a pan
1/2 lb grilled pork tenderloin, sliced
lettuce
1/2 cup feta cheese
fresh cilantro
1/2 lime
- Heat the oil in a pan and grill the pepper until it gets nicely brown on both sides.
- Slice the pepper and mix as much as you want in a bowl with tomatoes, oil, vinegar and salt. Set aside.
- Fill your tacos with lettuce, pork, salsa, feta and cilantro.
- Squeeze a little lime juice over each and serve.
TIP:
You can swap in whatever protien you like for these tacos!
