This low-carb toast substitute is made from sweet potatoes. It's a great go-to weekend breakfast. It’s also delicious with smoked salmon or ham.
SERVES 4
You will need:
2 sweet potatoes
2 tablespoons olive oil
handful of baby spinach
2 avocados, sliced
4 poached eggs
2 scallions, thinly sliced
salt
pinch of harissa olive oil

- Slice the sweet potatoes lengthwise about 1/4 of an inch thick.
- Heat oil in a pan and cook the sweet potatoes about 2 minutes on each side, or until tender. Divide sweet potatoes on plates.
- Top with spinach, avocado, poached eggs, scallions, salt, harissa, and a little olive oil.
